Sardella Reale® preserves its characteristics intact for up to 18 months, without the use of preservatives. A result born not only from artisanal know-how, but also from a rigorous scientific journey.
The production process was developed in collaboration with the Department of Health Sciences at the Magna Graecia University of Catanzaro, through the study of salting parameters, the control of water activity, and the structural stabilization of the raw materials.
Within this research ecosystem, D.E.M.E.T.R.A. was born – Diversificazione Eccellente delle Materie e Tecnologie Regionali Agroalimentari, the project through which Mater Calabria combines gastronomic tradition and innovation, shaping an advanced platform for the production of nutraceutical mousses and clean-label ready meals inspired by regional culinary culture.

Amount of investment allowed: € 399,986.60
Contribution allowed: € 299,989.95
This result confirms the solidity of the industrial project and its consistency with regional priorities in innovation, sustainability, and technological development. It also confirms the professional capacity of the team to intercept European, national and regional incentives of concessional finance.
